Rich pastry and roasted hazelnut complexity leaps from the glass, backed by the intense zing of tangy apple and orange zest. A full-bodied, weighty and creamy sparkling wine built around the firm core of acidity, this finishes with a sliver of sweetness but also plenty of savoury richness from autolysis before eventually giving way to slightly bitter phenolics, lingering oyster-shell and yuzu flavours. A mouthful of méthode traditionnelle and packed with concentration, the off-dry style makes it approachable now but it clearly has the material to justify further ageing in bottle for added complexity

Persistent, fine mousse. Subtly musky and delicately perfumed with savoury autolysis and floral undertones to the heritage apple flavours: a classic blanc de blancs expression. There is considerable power and weight backed up by intense acidity and restrained layers of toasty lees-ageing. The taut, sinewy style twists together onto the dry, slightly austere finish before the wet stone, lemon peel and grapefruit flavours give way to chalky phenolics and mushroom. This will improve if given time in the cellar to gain more toasty complexity, or if served wtih food to soften its very dry, acid-driven structure

Tight and precise with resounding acidity, this is notably taut and youthful. Linear in style but intensely concentrated, it twists with a kaleidoscope of lemon pith, green apple and pink guava which stains the palate with lingering perfume. Very backward and closed presently, this needs a lot more time to come together but there is clearly the depth to justify it. On the powerfully dry finish, notes of baking spice, pastry, cream, oyster-shell, white flowers and flint flash briefly across the tongue, hinting at the bounty that is to come

Fresh green herb aromas with lemon verbena, lime and lemon juice, subtle smokiness, the palate delicate and refined, subtle yet with good intensity. A fine wine, less powerful than the Hunting Hill, with understated depths and real grace.

Luminous coral-pink with a light haze. This is intensely flavoured and distinctly new wave, straddling the space between an amber wine, a rosé and a cerasuolo-like light red. There are fresh and crunchy mid-weight flavours of cranberry, wild strawberry, bitter cherry and pink grapefruit with citrus pith phenolics sitting alongside some spicy dried herbs. There is a fine, bony structure providing shape for the grainy mouth-feel and some uplifting spritz on the tongue before everything settles into pockets of tangy, savoury, fruity and pithy across the palate. Interesting, appetisingly dry and well-balanced, it will serve multiple purposes this summer and it will develop savoury, spicy complexity in the near-term if kept

Salmon colour. Intriguing and complex, this is a brooding, closed rosé which reluctantly yields savoury spice, rose petals, raspberry and elderberry with persistent coaxing. The palate is very concentrated and serious, underpinned by a powerful acid spine and very fine, submerged tannic structure. Yet, despite its intensity, everything comes to a close with lightness and poise on the bone-dry, peppery finish. With your eyes closed, this could easily pass for a very light, chilled red in flavour intensity. Approachable soon but this will easily continue developing for another year or two

Immense regal purple colour. The aromas are powerful and intense yet there's a lovely purity and freshness, with no sign of over-ripeness. Dark cherry, blackcurrant and plum aromas weave through cedar and nutmeg oak and there's even a touch of black liquorice. Firm, impactful tannins coat the palate but these are beautifully judged and act as a lovely counterpoint to the fruit. A little dried sage and thyme too. Long and sustained, this has masses of potential and demands time in the cellar

Dark opaque purple. There's plenty of intensity on the nose and whilst there is some gentle, sweetly spiced new oak, this doesn't dominate and instead the vivid blueberry, black cherry and violet florals shine. This is very youthful so (as expected) tannins are present but they are chalky and fine. There's freshness and drive despite its concentration and depth. A perfectly judged, polished wine

An arresting nose of white flowers, Braeburn apple, lime leaf and chalk. The palate is sneakily sweet and incredibly long, kept linear by very fine, laser-like acidity and feathery phenolics which corral the apple, citrus and honeysuckle flavours into the compact, steely core before cresting into the perfumed floral finish. Somehow, the piecing sweetness disappears into the wine while remaining light on its feet. A masterclass in balance and precision. This will age effortlessly like the fine wines of the Mosel

In the right hands pinot gris can be magical and this wine is proof positive. There's fresh fruit; yellow plums, apricot and rock melon but also some dried hay and fig too. Whilst it is luscious and rich, there's real precision thanks to a line of acidity that is salivating and beautifully integrated with the fruit. The finish is long and intense
