Vinous delights at Ash St. Cellar

Ash St. Cellar is a vibrant inner city Sydney wine bar with a sweep of fine international and local wines. It is tucked away in an atmospheric lane, parallel to George St and just down from Martin Place.

Being part of the Merivale group, where Master Sommelier Franck Moreau is at the helm of all things wine, one expects a fine vinous experience.

Ash St. Cellar certainly does not disappoint. With around thirty options by-the-glass and more than two hundred by-the-bottle, there are plenty of fine wines to select.

Prices by-the-glass are reasonable, with some good options between AUD $11-$14, climbing to the mid-twenties for fancier labels, including a selection of bubblies from Crémant d’Alsace to fine grower Champagne. There are plenty of adventures to be had with the broad varietal offering including altesse, garganega and savagnin, but also familiar favourites. I thoroughly enjoyed the Austrian sauvignon blanc and a Willamette Valley pinot noir. It is an ever-changing selection of interesting drops, served in fine stemware and available by-the-glass or carafe.

You will find a quality selection by-the-bottle, with a strong sparkling and champagne set. The table wine offering is fabulously diverse but to make it a little simpler and easier to digest, the red and white wines are astutely grouped by style such as ‘Dry & Citrusy’ or ‘Aromatic, Floral and Spicy’. And you don’t have to worry about getting something wilder than you planned, as all the ‘Weird and Funky’ wines are grouped together. There are also some of Merivale’s own ‘specially selected’ wines at very reasonable prices.

Regarding the food, we matched a selection of tasty share plates with each of our wines. The snapper and ham hock croquettes were steaming hot, crispy and more-ish; the kingfish ceviche with citrus and avocado was wonderfully fresh and lively; the wagyu bresaola was moist and tender, and the fennel sausage with celeriac purée and sautéed apple cider was beautifully balanced and delicious. I enjoyed a glass of Muscat-Beaumes-de-Venise for dessert, though ordered Valrhona petit fours to close. The service was swift and professional, which enhanced the whole experience.
