As the market is flooded with fruity, current vintage styles, I think that many people have forgotten that sauvignon blanc can also be made into restrained, gently-textured wines that have elegance and integrity.
Here is one such wine. Sourced from mature vineyards on the Bellarine Peninsula, the juice undergoes a cool fermentation followed by four months lees contact. 20% of the blend is fermented with indigenous yeasts in older French oak. The wine then spends time in bottle before release.
The result is a balanced, discreet and harmonious style of sauvignon blanc, with gentle pea pod and tropical nuances. The palate has an appealing breadth and is gently-textured, with bright, integrated acidity. (Screwcap)
